4 egg whites
Salt
1/2 cup black beans, rinsed and drained
1/4 cup green onions, chopped
1/4 cup cheddar cheese, reduced-fat
1/4 cup bottled salsa
Oil
Method
In a large bowl add the egg, egg white, cilantro and salt and whisk well.
Add beans, cheese, salsa and onions in another bowl and mix them well
Heat non-stick skillet and grease it with some oil.
Slowly ladle out some of the egg mixture on the pan.
Let it set slightly and then lightly tilting the pan let the runaway mixture settle under the cooked portion.
